Want to know a fun fact? I’m an Independence Day baby! That’s right, today is my birthday, and what better way to celebrate than by making all things sourdough - including a cake of course (recipe below).
My starter was super happy today so I spoiled myself and made bagels, pizza dough and a birthday cake! Some might ask why I’m doing the baking on MY birthday, but honestly, I absolutely LOVE baking for people, especially my family so there aren’t too many other ways I’d rather spend my birthday - as long as I don’t have to do the dishes!
Sourdough Vanilla Sheet Cake

Wet Ingredients
190 g melted butter (about 1.5 sticks)
4 large eggs
15 g vanilla extract (approx. 3 tsp)
125 g whole milk
150 g active sourdough starter (or discard)
Dry Ingredients
250 g all purpose flour
9 g baking powder (3 tsp)
5 baking soda (2 tsp)
250 g cane sugar
pinch of salt
Vanilla Cream Cheese Frosting
8 oz cream cheese
2 T unsalted butter
2-3 cups powdered sugar
1 T vanilla extract
pinch of salt
Berry Decorations
Blueberries
Strawberries (sliced) (raspberries work too)
Directions:
Prepare a 9 x 13 inch baking dish by spraying it with cooking spray. Set aside.
Preheat the oven to 350F.
In the bowl of a stand mixer, combine the wet ingredients - melted butter, eggs, vanilla, starter & milk. Mix on low until well combined.
In a separate bowl add the dry ingredients - flour, salt, sugar, baking powder and soda.
Slowly add the dry ingredients to the wet (1/4 cup at a time). Continue mixing on low speed until fully combined.
Pour batter into the prepared baking dish and bake for 30-45 minutes or until edges and top are golden brown and a toothpick comes out clean.
Allow to cool.
Meanwhile prepare your frosting by adding all of the ingredients into a small bowl. Using a hand mixer, mix on medium speed for about 2 minutes, adding more powdered sugar as needed. Once the cake is completely cooled, add the frosting to the top then decorate it with berries.
